Short-Cut Muffins / Cornbread
SHORT-CUT MUFFINS / CORN BREAD
Hello Again Everyone!
For those of you that love corn-bread as I do. You will love this one. The ingredients are readily available and there is a very good chance that you have them in your kitchen pantry at this very moment. This recipe is super moist, delicious and can be made sweet or unsweetened, muffins or skillet corn-bread. Let's get started!.
INGREDIENTS:
1. 2 boxes Jiffy Muffin Mix
(two boxes makes a better batter)
2. 7 tbsp. melted butter
3. 2/3 Cup of buttermilk or whole milk
(buttermilk for additional moistness)
4. Optional: 2-3 tbsp. of sugar for sweetness
5. 3 eggs
6. Cooking spray
(for muffin tin, flat pan, or skillet)
DIRECTIONS:
Combine well all of the above ingredients - (by hand)
Spray with cooking spray - muffin tin, flat pan or skillet
Bake in a 375/400 degree oven -
until golden brown and center is firm.
When done, top with butter or honey butter.
(do this while hot)
This recipe is so moist and delicious that it makes a great breakfast or snack with a cup of coffee or tea. Also great with chili, greens, beans or whatever you have a taste for.
