To those that I talk to frequently, from time to time I have mentioned how delicious  ramen stir fry is.  The secret is to not use the salty packet that comes with ramen.  As you can see from the picture it looks delicious and it taste as good as it looks.   Such an inexpensive, easy and delicious dish.  In my opinion that is as good as it gets (smile!).  So let's get started with  the recipe.  Oh! did I mention that it is also good left over.

RECIPE:

Ingredients:

Water to boil ramen - just enough to cover

Olive oil or oil of choicefor sauteing

Ramen - number of packets used depends upon number of desired servings.

Frozen or fresh veggies diced- belpepper, brocoli, onion, celery, carrots, spinach. Or use a variety of your favorite veggies.  The sky is the limit.

Your favorite seasonings - basil, garlic powder, onion powder, black pepper etc.  Do not salt until dish is complete and tasted.

Stir fry sauce - can be purchased at any grocery store

Optional:  cooked meat - diced or shredded chicken, pork, or beef can be added as well. 

Directions:

Season water with seasonings and  allow the water to boil for about 10 minutes so that the seasonings are well blended together.  Then add the ramen to the seasoned boiling water. Do not over cook.

Saute Veggies in olive oil or oil of choice
Do not over cook

After ramen is cooked and veggies are sauteed, add all the ingredients together.  Additional seasonings can be added at this time.  Add stir fry sauce and simmer together on a very low heat. Just enough to heat everything together.

Tips:  When sauteing veggies and boiling your noodles be careful not to over cook.  So that when the stir fry sauce is added to heat, your ingredients will not over cook.  Do not stir your ramen stir fry.  Lightly toss.  I suggest that you use a large non-stick skillet or wok.
